I would like to ask if and when a new version of the PaperMc software will be released based on the latest update of Minecraft 1.21.5 so I can play with my friends connected to PS5?

Updates to Paper do not have any sort of estimate for when they release, ever. Any and all updates will arrive when they are ready, and the only thing to do is wait for them patiently along with everyone else.
